Herbal tea garden
Chamomile, lemon balm, lavender, and stevia (and mint in a pot beside it) for tea you grow yourself.
Herbs for fresh and dried tea: chamomile, lemon balm, lavender, calendula, and stevia to sweeten it. Mint belongs in tea too, but it takes over a bed, so grow it in a pot beside this one.
What you'll make
Fresh herb tea in summer, and dried blends for winter.
When to plant
Plant after your last frost. Lemon balm, lavender, and mint come back every year.
What to plant in a 4 × 8 ft bed
| Crop | Plants | Space |
|---|---|---|
| Chamomile | 14 | 14 squares |
| Calendula | 4 | 4 squares |
| Lavender | 1 | 4 squares |
| Stevia | 1 | 4 squares |
| Lemon balm | 1 | 4 squares |
Tall crops go along the north side, so they don't shade the rest. It also comes in 4 × 4 ft and 4 × 12 ft versions.
Tips
- Mint spreads by runners and crowds out its neighbors: grow it in its own pot next to the bed.
- Pick in the morning, after the dew dries, when the oils are strongest.
- Dry herbs in small bunches somewhere dark and airy, then store them in jars.
- Pick chamomile flowers when they're fully open; they keep coming all summer.
