Greens, roots, and cucumbers that blend and juice well, picked young and tender.
What you'll make
Green smoothies, carrot and beet juice, and cucumber coolers.
When to plant
Greens, beets, and carrots in early spring and again in late summer; cucumbers after your last frost.
What to plant in a 4 × 8 ft bed
| Crop | Plants | Space |
|---|---|---|
| Cucumber | 5 | 5 squares |
| Kale | 7 | 7 squares |
| Spinach | 63 | 7 squares |
| Beet | 45 | 5 squares |
| Carrot | 80 | 5 squares |
| Parsley | 3 | 3 squares |
Tall crops go along the north side, so they don't shade the rest. It also comes in 4 × 4 ft and 4 × 12 ft versions.
Tips
- Pick greens young: baby kale and spinach blend smoother and taste milder.
- Beet greens are good in smoothies too; use the roots for juice.
- Freeze handfuls of washed greens in bags, so smoothies are ready all winter.
- Trellis the cucumbers on the north side.
