Salsa garden
Tomatoes, peppers, tomatillos, onions, and cilantro for fresh salsa all summer.
Everything for a bowl of salsa in one bed: meaty tomatoes, hot and sweet peppers, tomatillos for salsa verde, onions, and cilantro.
What you'll make
Pico de gallo, cooked salsa to can, and salsa verde.
When to plant
Warm season. Plant tomatoes, peppers, and tomatillos after your last frost; onions and cilantro can go in a few weeks earlier.
What to plant in a 4 × 8 ft bed
| Crop | Plants | Space |
|---|---|---|
| Tomato | 3 | 12 squares |
| Hot pepper | 1 | 4 squares |
| Cilantro | 24 | 6 squares |
| Onion (sets) | 45 | 5 squares |
| Pepper | 1 | 4 squares |
Tall crops go along the north side, so they don't shade the rest. It also comes in 4 × 4 ft and 4 × 12 ft versions.
Tips
- Grow paste tomatoes like Roma or San Marzano: they make thicker salsa with less juice to drain.
- Tomatillos need a partner to set fruit, so plant at least two.
- Cilantro goes to seed in summer heat. Sow a little every three weeks in spring and again in late summer, or let some bloom and save the seed as coriander.
- Pick peppers green for a sharper bite, or leave them to turn red for sweeter, hotter salsa.
