Root cellar garden
Potatoes, onions, carrots, beets, parsnips, garlic, and winter squash that keep for months.
Crops that store: grow them in summer, and eat from the cellar, garage, or a cool closet all winter.
What you'll make
Months of potatoes, onions, roots, and squash after the garden is done.
When to plant
Potatoes, onions, roots, and parsnips go in early spring; squash after your last frost; garlic the fall before.
What to plant in a 4 × 8 ft bed
| Crop | Plants | Space |
|---|---|---|
| Potato | 9 | 9 squares |
| Onion (sets) | 54 | 6 squares |
| Carrot | 96 | 6 squares |
| Beet | 54 | 6 squares |
| Parsnip | 18 | 2 squares |
| Garlic | 12 | 3 squares |
Tall crops go along the north side, so they don't shade the rest. It also comes in 4 × 4 ft and 4 × 12 ft and 8 × 12 ft versions.
Tips
- Cure before storing: onions and garlic dry for 2 to 3 weeks, squash sits somewhere warm for 10 days, potatoes rest in the dark for 2 weeks.
- Leave parsnips in the ground until after a few frosts: they turn sweet.
- Don't wash roots before storing; brush off the soil and keep them cool and humid.
- Grow storage varieties: they keep far longer.
