Mediterranean herb garden
Rosemary, thyme, sage, oregano, marjoram, and lavender: drought-tolerant herbs that come back every year.
The sun-loving herbs of the Mediterranean: they like lean, well-drained soil, little water, and lots of sun, and most come back every year.
What you'll make
Herbs for roasts, soups, and bread, herb butter, and dried bundles for winter.
When to plant
Plant after your last frost. Rosemary needs a pot brought indoors where winters are colder than zone 7.
What to plant in a 4 × 8 ft bed
| Crop | Plants | Space |
|---|---|---|
| Rosemary | 1 | 4 squares |
| Thyme | 8 | 8 squares |
| Sage | 1 | 4 squares |
| Oregano | 8 | 8 squares |
| Marjoram | 4 | 4 squares |
| Lavender | 1 | 4 squares |
Tall crops go along the north side, so they don't shade the rest. It also comes in 4 × 12 ft versions.
Tips
- Go easy on water and fertilizer: these herbs taste stronger in lean soil.
- Add grit or sand for drainage: wet roots in winter kill them more than cold does.
- Cut back by a third after flowering to keep plants bushy.
- Harvest before they bloom for the most flavor.
