Kimchi garden
Cabbage, daikon radish, bok choy, scallions, garlic, and carrots for homemade kimchi.
The vegetables for kimchi, ready together in fall: cabbage, daikon, bok choy, scallions, garlic, and carrots.
What you'll make
Napa cabbage kimchi, radish kimchi, and quick pickles.
When to plant
Cool season: plant in late summer for a fall harvest (or in early spring). Garlic goes in the fall before.
What to plant in a 4 × 8 ft bed
| Crop | Plants | Space |
|---|---|---|
| Cabbage | 2 | 8 squares |
| Garlic | 8 | 2 squares |
| Bok choy | 24 | 6 squares |
| Scallions | 96 | 6 squares |
| Daikon radish | 24 | 6 squares |
| Carrot | 48 | 3 squares |
Tall crops go along the north side, so they don't shade the rest. It also comes in 4 × 4 ft and 4 × 12 ft versions.
Tips
- Grow a napa (Chinese) cabbage variety for classic kimchi; regular cabbage works too.
- Daikon grows fast: sow it in late summer and pull it before the ground freezes.
- Hot peppers for gochugaru belong in another bed: peppers and the cabbage family make poor neighbors.
- Cover the cabbage family with netting to keep cabbage worms off.
